Vegan chocolate muffins

Ingredients for 1 servings:

  • 125 g flour
  • 120 g sugar
  • 130 g plant milk (plant drink), e.g. oat drink or soy drink
  • 30 g butter substitute or margarine, vegan
  • 30 g baking cocoa
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • 1 pinch(s) salt
  • some chocolate chips, vegan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 180 degrees Celsius (top and bottom heat). Weigh the dry ingredients in a large bowl. Melt the vegan butter and add it to the dry ingredients along with the plant-based milk. Mix everything briefly. Carefully fold in the chocolate chips. Reserve a small portion for garnishing. Fill the muffin tins about 3/4 full and garnish with the chocolate chips. Bake in the preheated oven for about 25-30 minutes (depending on the oven; it’s best to do the toothpick test after 20 minutes). This amount is enough for about 8 muffins.
