Turkey medallions wrapped in bacon, topped with curry cream sauce

Ingredients for 2 servings:

  • 6 turkey medallions
  • 6 strips of bacon
  • salt and pepper
  • 300 ml cream, also low-fat possible
  • 150 g crème fraîche, light if desired, and/or with herbs
  • 150 ml vegetable stock
  • 2 tsp curry paste, yellow
  • 1 tbsp tomato paste
  • 1 pinch(s) of sugar
  • Fat for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Season the turkey medallions with salt and pepper (use the salt carefully, as the bacon will release quite a bit of flavor!), then wrap them in the bacon strips. Brown them all over in hot frying fat and place in a casserole dish. Mix the cream, crème fraîche, and vegetable stock with the curry paste, tomato paste, sugar, salt, and pepper, and season to taste. Pour the sauce over the meat and bake in a preheated oven at 200°C (400°F) for about 15 minutes. The time depends on the thickness of the medallions. Many potato side dishes, such as duchess potatoes, croquettes, mashed potatoes, etc., go well with this dish.
