Ingredients for 4 servings:
- 600 ml almond milk (almond drink) or soy milk
- 35 g cornstarch
- 80 g dates
- 50 g baking cocoa
- possibly raspberries
- possibly dark chocolate, vegan
- possibly vanilla
- 35 g cashew nuts
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Whisk 150 ml of almond milk with the cornstarch and cocoa powder until smooth. Add the dates and cashews, and vanilla, if desired, and blend. Bring the remaining milk to a boil briefly, remove from the heat, add the cocoa mass, and bring back to a boil briefly. Pour the pudding into a glass bowl and garnish with raspberries and dark chocolate, if desired. The pudding will set in the refrigerator.
