Vegan: Colorful Pan of Vegetables

The perfect vegan: colorful pan of vegetables recipe with a picture and simple step-by-step instructions.

  • 1 size Cut onion
  • 2 size Diced carrots
  • 2 medium sized Diced potatoes
  • 2 medium sized Olive oil
  • 20 piece Brussels sprouts quartered
  • 20 piece My vegetable broth *
  • Water as needed
  • My celery and fennel salt *
  1. Wash and peel the vegetables, peel the onion and cut everything into pieces. Put some oil in a pan and stir in the onions. Then add the carrot cubes and sear them.
  2. After about 3-5 minutes, add the potato cubes, about 2 tablespoons of my vegetable stock, stir everything well, then add a little water, so that the vegetables are just under half in the water. Now put the quartered Brussels sprouts on the vegetables, close the pan with a lid and slowly simmer for about 15-20 minutes.
  3. Remove the lid and stir well and let everything stand for a few minutes ….. in that time I have set the table … and enjoy your meal 🙂
  4. At the table we spiced it with other salts and my celery-fennel salt ……. s u p e r yummy!
