Ingredients for 1 servings:
- 500 g wheat flour, type 405
- 2 tsp baking powder
- 125 g sugar
- 1 lemon(s), zest only
- 1 packet of vanilla sugar
- 1 pinch of salt
- 1 serving of egg(s) – substitute
- 250 g margarine, melted
- possibly water
Instructions
Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 17 minutes
Mix the flour with the baking powder, then add the sugar, grated lemon zest, vanilla sugar, and salt and mix everything well. Finally, add the egg substitute for 1 egg and the melted margarine and knead everything together. If the dough is too dry, add a little water until you can knead it into a smooth ball. Then let the dough rest in the refrigerator for 30 minutes. Then roll out the dough to a thickness of about 3-4 mm and cut out cookies. Bake at 200°C (top/bottom heat) for about 8-12 minutes. When the edges of the cookies turn very light brown, remove them from the oven immediately, as they should remain light in color. Let the finished cookies cool on a wire rack and decorate if desired.
