Vegan cranberry cookies with pistachios

Ingredients for 1 servings:

  • 250 g spelt flour type 630
  • 100 g oat flakes, fine
  • 170 g raw cane sugar
  • 1 tsp baking powder
  • 1 pinch of vanilla powder
  • 1 pinch of salt
  • ½ organic orange(s), grated peel
  • 180 g margarine
  • 2 tbsp oat milk (oat drink)
  • 60 g cranberries, dried
  • 30 g macadamia nuts or cashew nuts, ground
  • 60 g pistachios, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Combine flour, oats, sugar, baking powder, vanilla, and salt. Mix well. Add grated orange zest, margarine, and oat milk. Knead everything well. Finally, stir in the cranberries and nuts. Form the dough into approximately 50 flat cookies and place them on two baking sheets lined with parchment paper. Bake in a preheated oven at 190°C (top/bottom heat) for 10-12 minutes.
