Vegan fruit base with berries

Ingredients for 1 servings:

  • 225 g flour
  • 125 g sugar
  • 25 g vanilla sugar
  • 5 tsp, leveled baking powder
  • 250 ml soy milk (soy drink)
  • 6 tbsp sunflower oil
  • n. B. Berries of your choice
  • 1 pack of cake glaze, vegan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Combine the flour, sugar, vanilla sugar, and baking powder in a bowl and mix. Add the soy milk and oil and mix well until a thick batter forms. Grease the baking tin thoroughly and pour in the entire batter. Bake the cake for 25 minutes in a preheated oven at 180°C on the middle rack. The cake should be golden brown. Turn the cake out directly onto a cake plate and let it cool completely. Distribute the fruit on the base as desired, e.g. first arrange blueberries in a circle around the edge and then add a thick layer of currants and blueberries in the middle. Prepare the glaze according to the package instructions and carefully pour it over the berries. Let it cool.
