Ingredients for 1 servings:

  • 7 ½ g gingerbread spice
  • 125 g vegetable fat
  • 65 g unrefined cane sugar
  • 140 g spelt flour, type 1050
  • 100 g ground almonds

Instructions

Set aside 1/2 teaspoon of gingerbread spice for sprinkling over the finished baked goods. Knead the butter and sugar with the spice, sifted flour, and almonds on the countertop and chill for 30 minutes. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Shape the dough into 2-3 cm long croissants, place them on a baking sheet lined with parchment paper, and bake for 12 minutes until light brown. Mix about 2 teaspoons of brown sugar with the remaining gingerbread spice and sprinkle over the warm croissants.
