Vegan herb cheese

Ingredients for 4 servings:

  • 75 g cashew nuts, natural
  • 150 ml water
  • 4 tbsp cornstarch
  • 3 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 pinch of garlic powder
  • 1 pinch of salt
  • 1 tbsp herbs de Provence

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 15 minutes

Combine all ingredients, except the Provençal herbs, in a blender and blend for about 1 minute. Pour the mixture into a non-stick pan and stir continuously over medium heat until a smooth dough forms. Spread the dough evenly in a rectangular container with the back of a spoon and press firmly. Let rest in the refrigerator for 1 hour. After the resting time, remove the cheese from the container and press it firmly into the Provençal herbs scattered on a plate.
