Vegan Lava Cake: This is how you succeed with the dessert

A warm chocolate cake with fluffy dough and a liquid chocolate core that flows out of the cake like hot lava – even if you’re vegan, you don’t have to do without this dessert. For four plant-based cakes, you need 45 g vegan dark chocolate, 40 ml rapeseed oil, 150 ml almond or oat milk, 100 g sugar, 100 g flour, 2 tbsp cocoa powder, and a pinch of salt.

  • Weigh all the ingredients and preheat your oven to 200 degrees. The hot temperature is important for the success of the liquid core.
  • Slowly melt the vegan dark chocolate over a water bath. Then allow the chocolate to cool slightly so that it is still warm but no longer hot.
  • In a kitchen bowl, mix the canola oil with your vegan milk alternative. Use a whisk for this. Now add the melted chocolate and whisk the mixture.
  • In a second bowl, mix together all the remaining dry ingredients. Slowly stir the dry mixture into the chocolate mixture until a homogeneous mass is obtained.
  • Divide the mass between four silicone molds or greased and sugared muffin cases and bake your vegan lava cake for about eight minutes. After they have cooled down, turn them out onto a plate and enjoy the cakes while they are still warm.
