Ingredients for 1 servings:
- 300 ml lemon juice
- 400 g sugar
- 1 tbsp lemon peel
- 100 ml coconut milk
- 50 g margarine, vegan
- 4 tsp cornstarch
- 4 tsp water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Combine all ingredients except the cornstarch and water in a saucepan and bring to a boil. Mix the cornstarch with the water and pour it into the simmering mixture. Stir everything well and wait until the cornstarch thickens. Experiment with the amount of sugar and cornstarch a little, depending on how sweet or firm you like it. While the lemon curd is still hot, pour it into a screw-top jar, put the lid on, and refrigerate it. It should keep for several weeks.
