Vegan low-carb pancakes

Ingredients for 1 servings:

  • 300 ml soy milk (soy drink), e.g. Alpro Light
  • 30 g powder, (protein powder) vegan
  • 20 g hazelnuts, ground
  • 20 g oat flakes
  • 30 g wheat flour
  • 10 g soy flour
  • 7 g locust bean gum
  • 2 ½ g baking powder
  • n. B. Sweetener, (liquid sweetener)
  • some margarine for the pan

Working time approx. 20 minutes; Total time approx. 20 minutes

Low-carb pancakes without animal ingredients

Mix the soy milk and protein powder. Grind the oats. Add all ingredients except the locust bean gum and mix thoroughly. Add the locust bean gum and mix thoroughly again. Melt a little margarine in the pan. Then pour the mixture into the hot pan in portions. Depending on the thickness, spread the mixture out slightly. Bake for a few minutes, then carefully loosen and flip the pancakes. The small amount of wheat flour makes them a bit brittle, but I managed to flip them without any problems. Per 100g (without margarine): 135 kcal, 11 g protein, 12 g carbohydrates.
