Ingredients for 1 servings:

  • 2 slices of bread
  • 6 slices of meat substitute (vegan pastrami)
  • 1 gherkin(s)
  • 1 lettuce leaf
  • 1 tbsp vegan mayonnaise
  • 2 tsp mustard
  • 1 tsp agave syrup

Cut the cucumber lengthwise into thin slices. Toast the bread slices in the toaster. If you prefer the pastrami lukewarm, heat it in the microwave for about 30 seconds before topping the bread. This will make it more elastic and easier to fold. Mix the mustard and agave syrup to make a dressing. Spread the mayonnaise on the bottom slice of bread and top with lettuce, pastrami, and cucumber slices. Drizzle the mustard dressing over the top slice of bread and place the top slice on top.
