Vegan pizza rolls

Ingredients for 5 servings:

  • 2 packs of pizza dough, frozen or puff pastry, vegan
  • 250 g tofu, finely chopped or granulated, finely chopped or soaked
  • 250 g mushroom, finely chopped
  • 1 jar Ajvar, hot or mild
  • 1 onion(s), finely chopped
  • 150 g cheese substitute, vegan, grated
  • 1 tbsp oregano
  • 1 tbsp olive oil
  • pepper
  • Salt, if necessary
  • e.g. olives, peppers or other vegetables

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 180°C (top/bottom heat). Fry the onion in olive oil until translucent. Add the tofu and mushrooms to the pan and fry until the tofu is slightly crispy. Season everything with ajvar, oregano, cheese substitute, and pepper, and salt if desired, as the ajvar and grated cheese already contain salt. Line both layers of dough and spread evenly with the mixture. Then roll the layers together and cut into 15 to 20 pieces, each about 2 cm thick. Place the pieces on a baking sheet lined with baking paper. Bake for 20 minutes. For the filling, you can add olives or peppers, for example. The snails are perfect as a buffet side dish, as a snack between meals, or as a main meal with a salad.
