Vegan plum semolina and nut cake

Ingredients for 1 servings:

  • 250 g semolina (soft wheat)
  • 125 g ground almonds
  • 125 g hazelnuts, ground
  • 50 g flour
  • 1 packet of baking powder
  • 200 g raw cane sugar
  • some vanilla pulp, or 1 packet of vanilla sugar
  • 450 ml almond milk (almond drink) or soy milk
  • 300 g plums
  • some powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Wash and pit the plums. Combine all the dry ingredients in a bowl. Whisk in 450 ml of almond milk (or 1-2 tablespoons more if necessary) and stir the batter until no lumps form. Pour the batter into a 26 cm springform pan lined with baking paper and place the plums on top. Bake in a preheated oven at 180°C for approximately 45-55 minutes. The time varies depending on the oven! Test with a skewer – the cake is done when it is lightly browned. Let it cool, then dust with powdered sugar.
