Vegan: Rice Noodles with Broccoli in Coconut Milk
The perfect vegan: rice noodles with broccoli in coconut milk recipe with a picture and simple step-by-step instructions.
- 3 handful Rice noodles
- Water for boiling
- Salt
- ***************************
- 2 piece Broccoli
- 1 Can Unsweetened coconut milk
- 1 Can Pepper
- 1 Can My vegetable broth *
- 1 small Chopped onion
- 1 small Coconut oil to stew
- 1 small *****************************
- Chopped parsley
Broccoli – coconut milk – sauce
- Separate the broccoli roses, wash them and then put them in boiling water, let them steep for 3 minutes and rinse them in cold water.
- Braise the chopped onion in coconut oil and pour in the coconut milk, season with the vegetable stock (I took my daughter with me) and let it boil down for a few minutes.
- Boil down the coconut milk depending on your taste and taste, then add the broccoli pieces, swirl everything well and season again if necessary.
Cooking pasta
- Boil the rice noodles in sufficient water, cook them and drain them into a sieve.
Serving
- Now either add the rice noodles to the sauce and toss them again and then place them on the preheated plate … or distribute the rice noodles on the plates and spread the coconut milk sauce over the noodles – as you like, then some parsley spread over it – Bon appetit 🙂
