Vegan: Rice Noodles with Broccoli in Coconut Milk

Ingredients
 

  • 3 handful Rice noodles
  • Water for boiling
  • Salt
  • ***************************
  • 2 piece Broccoli
  • 1 Can Unsweetened coconut milk
  • 1 Can Pepper
  • 1 Can My vegetable broth *
  • 1 small Chopped onion
  • 1 small Coconut oil to stew
  • 1 small *****************************
  • Chopped parsley

Instructions
 

Broccoli - coconut milk - sauce

  • Separate the broccoli roses, wash them and then put them in boiling water, let them steep for 3 minutes and rinse them in cold water.
  • Braise the chopped onion in coconut oil and pour in the coconut milk, season with the vegetable stock (I took my daughter with me) and let it boil down for a few minutes.
  • Boil down the coconut milk depending on your taste and taste, then add the broccoli pieces, swirl everything well and season again if necessary.

Cooking pasta

  • Boil the rice noodles in sufficient water, cook them and drain them into a sieve.

Serving

  • Now either add the rice noodles to the sauce and toss them again and then place them on the preheated plate ... or distribute the rice noodles on the plates and spread the coconut milk sauce over the noodles - as you like, then some parsley spread over it - Bon appetit 🙂
