Vegan sweet potato pancakes

Ingredients for 1 servings:

  • 200 g sweet potatoes
  • 150 g flour
  • 1 pinch of salt
  • 1 tsp cinnamon powder
  • 1 packet of vanilla sugar
  • 250 ml plant-based drink, e.g. soy or almond drink, etc.
  • 100 ml carbonated mineral water
  • ½ pack of baking powder
  • some oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

makes about 10 pancakes

Dice the sweet potato and cook until soft, then drain the water. Separately, mix the flour and spices. Puree the sweet potatoes very finely and add the mixture and plant-based milk to the flour mixture. Whisk until smooth and battered and let stand for about 15 minutes. Then add the sparkling water and baking powder and mix well again. Heat the oil in a pan and add a spoonful of batter to each pancake, covering the bottom. Spread the batter to fill the pan. Fry for about 1 minute on each side, until golden brown. Makes about 10 pancakes.
