Vegan Tiger Nut Pancakes

Ingredients for 2 servings:

  • 30 g tiger nut flour
  • 30 g wholemeal spelt flour
  • 1 tsp cream of tartar baking powder
  • ½ tsp cinnamon
  • 100 ml oat milk (oat drink)
  • 1 banana(s), ripe
  • 4 tbsp flaxseed, preferably crushed
  • 5 tbsp water
  • 2 tbsp oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Combine tiger nut flour, wholemeal spelt flour, cream of tartar, and cinnamon. Mash the banana. Mix the flaxseeds with the water and let it swell briefly. Stir the banana, flaxseeds, and oat milk into the flour mixture. If it’s too dry, add a little more oat milk. Heat the oil. Drop the batter into the pan with a large spoon and fry the pancakes until golden brown on both sides.
