Vegan tiramisu with berries and speculatius cookies

Ingredients for 8 servings:

  • 150 g speculatius biscuits
  • 32 g vanilla sugar
  • 400 g soy yogurt (yogurt alternative)
  • 125 g raspberries
  • 125 g blueberries
  • 1 cup of coffee

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Dip the speculatius biscuits in the coffee and crumble them on a plate. The coffee is for dipping only. Do not dissolve the biscuits in it. Divide half of the speculatius mixture among 8 tall glasses and press lightly into the bottom. Layer the berries on top. Mix the yogurt with the vanilla sugar. Cover the glasses with yogurt. Spread the remaining speculatius mixture on top. Refrigerate for about 2 hours.
