Sift the flour into a large bowl, then add the water, olive oil, wine, and spices. Mix everything well and knead for a few minutes until the dough is even and smooth. Cover the dough with cling film and let it rest for 15-20 minutes in a dry, not too warm place. In the meantime, preheat the oven to 180 degrees Celsius (top/bottom heat). Roll out the dough on a floured baking sheet using a rolling pin until it is about 3-4 mm thick. Then, using a serrated rolling pin, cut the dough into small rectangles of any size. Place the baking paper with the dough pieces on a baking sheet and bake in the oven for about 20 minutes. Note: The crackers will still be crispy even after days. When it comes to spices, the sky’s the limit. Variations with flaxseed, poppy seeds, or tomato paste are recommended.
