Vegan: Vegetable Platter with Quinoa

The perfect vegan: vegetable platter with quinoa recipe with a picture and simple step-by-step instructions.

  • 2 Tasen Quinoa
  • 3 cups Filtered water
  • 1 tbsp My vegetable broth *
  • 1 small Diced celery bulb
  • 1 piece Diced cucumber
  • 1 piece Diced zucchini
  • 20 g Alsan or oil
  • 1 tbsp My vegetable broth *
  • Pepper from the grinder

Quinoa ….

  1. Put in a saucepan, add the vegetable stock and pour the water over it. Bring the whole thing to a boil and cook.

To vegetables

  1. Peel, wash and dice the celery. Peel the cucumber in half lengthways and scrape out the seeds with a spoon, then dice the courgette too.
  2. Heat up in a pan and sear the celery cubes, then add the zucchini cubes and the cucumber cubes, sprinkle the vegetable stock over them and braise everything for a few minutes. Season everything well with pepper.

Serving …

  1. 4 …. Arrange everything on preheated plates, place quinoa, about 2 tablespoons on each plate and add the vegetables, grind a little pepper over everything and then enjoy – bon appetit
