Ingredients
- 2 Tasen Quinoa
- 3 cups Filtered water
- 1 tbsp My vegetable broth *
- 1 small Diced celery bulb
- 1 piece Diced cucumber
- 1 piece Diced zucchini
- 20 g Vegan butter
- 1 tbsp My vegetable broth *
- Pepper from the grinder
Instructions
Quinoa ....
- Put in a saucepan, add the vegetable stock and pour the water over it. Bring the whole thing to a boil and cook.
To vegetables
- Peel, wash and dice the celery. Peel the cucumber in half lengthways and scrape out the seeds with a spoon, then dice the courgette too.
- Heat up in a pan and sear the celery cubes, then add the zucchini cubes and the cucumber cubes, sprinkle the vegetable stock over them and braise everything for a few minutes. Season everything well with pepper.
Serving ...
- 4 .... Arrange everything on preheated plates, place quinoa, about 2 tablespoons on each plate and add the vegetables, grind a little pepper over everything and then enjoy - bon appetit
