Vegan Vegetable Quiche
The perfect vegan vegetable quiche recipe with a picture and simple step-by-step instructions.
ground
- 150 g Ground buckwheat
- 100 g Ground brown millet
- 125 g Vegan margarine (Almsana for me)
- 4 tbsp Cold water
- 2 tbsp Flaxseed crushed
- 1 tbsp Soy flour
- Salt
filling
- 0,5 piece Diced Hokkaido pumpkin
- 1 piece Red peppers diced
- 125 g Sliced brown mushrooms
- 250 g Fresh spinach, roughly chopped
- 1 piece Grated turmeric root
- 0,5 piece Organic lemon, juice and zest
- 1 tsp Dried oregano and thyme
- Salt, pepper, rapeseed oil
Molding
- 350 g Silken tofu
- 2 tbsp Almond butter white
- 100 ML Soy cream
- 1 tbsp Yeast flakes
- Salt pepper
Bottom of quiche
- Grind the flour from the buckwheat and brown millet (or use the ready-made), mix in a bowl with the margarine and the water, salt, soy flour and flaxseed meal and knead until a dough is formed – not a classic shortcrust pastry. Put this in the fridge for 20 minutes, wrapped in a cloth. Line a quiche pan with it, pressing the dough into it with my hands, unfortunately it is not possible to roll it out due to the consistency. Bake in the preheated oven (180 degrees top / bottom heat) for about 12 minutes. Take out and wait for the filling.
filling
- Heat rapeseed oil in a pan, rub in turmeric and sweat the diced paprika and hokkaido pieces for about 5 minutes. Add the oregano and thyme. Reduce the heat a little and add the mushrooms. After another 5 minutes, add the diced tomatoes. Simmer a little and at the end add the chopped spinach, stir until it collapses. Refine with lemon zest, lemon juice, salt and pepper. Allow to cool slightly.
Molding
- In a bowl, stir the silken tofu with the almond butter, the yeast flakes and the soy cream until smooth, season with salt and pepper. Mix with the not quite hot vegetable filling and spread on the quiche base. Bake again at 180 degrees for about 45 minutes. Let cool down, enjoy, e.g. with a crispy salad. Incidentally, it can be kept in the refrigerator for a few days and can also be warmed up.
