Ingredients for 4 servings:
- 1 potato(s), sliced
- 2 potatoes, diced
- 1 pack of vegan cooking cream, approx. 200 ml
- 2 tbsp vegetable stock powder, vegan
- 1 ½ liters of water
- 3 handfuls of wild garlic, fresh
- 2 spring onions or onions, sliced
- possibly spelt flour for thickening
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Bring the water with the vegetable stock to a boil, add the peeled and diced potatoes, and cook until tender. Then mash them. Next, add the vegan cooking cream (or two tetra packs). Next, add the sliced potatoes and spring onions, and bring to a boil. Finally, add the finely chopped wild garlic and remove the pot from the heat to preserve as much of the valuable nutrients as possible. If desired, thicken the soup with spelt flour.
