Vegetable and minced meat pan

Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 500 g minced beef
  • 1 large onion(s)
  • 2 garlic cloves
  • 2 zucchinis
  • 2 yellow bell peppers
  • 2 beefsteak tomatoes
  • 1 tbsp tomato paste
  • salt and pepper
  • 150 ml vegetable stock
  • 2 sprigs of thyme
  • 2 sprigs basil
  • 100 g Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Heat the oil. Add the minced meat and fry until crumbly. Peel and chop the onion and garlic. Add to the meat and fry for about 3 minutes. Clean and wash the vegetables. Slice the zucchini, dice the bell peppers and tomatoes. Add to the meat. Simmer for 5 minutes. Stir in the tomato paste, season with salt and pepper. Add the broth and simmer for about 10 minutes. Pluck the herbs from the sprigs and chop. Stir into the vegetables, season again to taste, and sprinkle with Parmesan cheese. Serve immediately.
