Ingredients for 2 servings:
- 500 g minced meat, mixed or beef
- 1 onion(s)
- 3 carrots
- 1 zucchini
- 3 bell peppers, colored
- 2 tsp vegetable broth, instant
- 1 small piece(s) of celeriac
- 3 eggs
- 200 ml cream or milk
- 50 g grated cheese of your choice
- salt and pepper

Low-carb
Instead of buying celery and carrots separately, simply use a bunch of soup vegetables. You can also use the leeks and parsley from this. First, chop all the vegetables into small cubes so they won’t take as long to cook later. It’s best to separate the carrots, celery, and half of the bell peppers at this point. I always place the chopped ingredients in small bowls or plates. Fry the ground meat until cooked through. I don’t use any oil for frying. While it’s frying, add the finely chopped onion and 1 teaspoon of vegetable stock. Pour the ground meat and onion mixture into a casserole dish. Then add a little oil to the pan and sauté the carrots, celery, and half of the bell peppers. It’s best to do this on medium heat so nothing burns. When the vegetables have softened, transfer everything to a bowl and let cool slightly. Add a little more oil to the pan and fry the remaining vegetables (bell peppers and zucchini). When they are well browned, add them to the casserole dish with the ground meat. Preheat the oven to 180°C (top/bottom heat, fan oven: 150°C). Now, using a fork, chop the cooked carrots, celery, and bell pepper. Add the cream or milk and 1 teaspoon of vegetable stock, and season with pepper. Once pureed, add half of the grated cheese and the 3 eggs, and mix well. Pour the mixture over the minced meat and vegetables in the casserole dish. Sprinkle with the remaining cheese and place in the oven until the egg has set and the cheese has melted. This takes about 25 minutes. Tip: This dish is very versatile. A little feta cheese in the minced meat and vegetable mixture also tastes great. You can also use other vegetables. Basically, anything you have in your fridge will do. For those not on a diet, this dish goes well with baguette, potatoes, or rice. Or a dollop of crème fraîche.
