Vegetable baguette patties

Ingredients for 3 servings:

  • 1 baguette(s) (garlic baguette)
  • 1 bunch of soup vegetables (some carrots, a piece of celery and a leek)
  • 2 large onions
  • 4 eggs
  • some flour
  • 3 tsp vegetable broth, instant
  • 4 tsp Maggi
  • 4 tsp balsamic vinegar
  • 2 tsp chives
  • some paprika powder
  • some nutmeg
  • some oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Bake the baguette according to the package instructions and then let it cool. Peel the carrots and trim the celery and leek. Finely grate the carrots and celery. Halve the leek and then slice into rings. Peel the onions and chop into small pieces. Heat a little oil in a pan and sauté the vegetables until they collapse. Season generously with the vegetable stock, nutmeg, and paprika. Cut the baguette into small pieces and place them in a large bowl with the vegetables. In a bowl, whisk the eggs with the Maggi, balsamic vinegar, and chives. Then mix the eggs with the vegetable-baguette mixture and add a little flour to thicken it. Grease the pan again with a little oil and heat it up. Using a tablespoon, drop the mixture into the pan in small portions and shape into patties. Fry the patties on both sides until lightly browned.
