Ingredients for 4 servings:

  • 50 g butter
  • 3 m.-sized eggs
  • 100 g flour
  • 1 tsp baking powder
  • 200 g ham
  • 200 g cheese
  • 1 m.-large pepper
  • 1 large onion(s)
  • ½ bunch chives
  • ½ bunch parsley
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

quick to make and versatile

Chop the ham, vegetables, and herbs into small pieces. Make a batter with butter, eggs, flour, and baking powder. Then fold in the ham, cheese, vegetables, and spices. Spread everything evenly into a loaf pan lined with baking paper. Bake at 200 degrees Celsius (400 degrees Fahrenheit) for about 40 minutes using top and bottom heat. Do the skewer test. It’s best to leave the vegetable cake in the oven a little longer. It should definitely brown on top. Don’t worry: it will still be moist on the inside. It will tend to dry out in a shallow dish. If you like, you can lightly fry the vegetable cake in a pan the next day. It also freezes well.
