Ingredients for 4 servings:

  • 500 g minced meat, half and half
  • 1 m.-large zucchini
  • 1 large carrot(s)
  • 2 eggs
  • 1 m.-sized onion(s)
  • Breadcrumbs
  • Mustard
  • salt and pepper
  • e.g. tomato paste
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Meatballs made from minced meat and vegetables

Dice the zucchini, onion, and carrot very finely and place in a large bowl. Add the ground beef, eggs, and some breadcrumbs. Season with mustard, salt, pepper, and tomato paste, if desired. Knead for about 5 minutes until you have a nice, pliable meat dough, kneading in a little more breadcrumbs if desired. Form the meat dough into meatballs. Heat oil in a pan. Add the meatballs and fry over medium heat until cooked through. The meatballs are delicious with mashed potatoes.
