Ingredients for 4 servings:

  • 1 kg leaf spinach, finely chopped
  • 300 g carrot(s), sliced
  • ½ onion(s), diced
  • 200 g millet
  • 600 ml vegetable stock
  • Salt and pepper, nutmeg
  • 2 tbsp oil
  • 3 tbsp cream (soy cream)
  • ½ tsp curry powder

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring 500ml vegetable stock to a boil, add millet, and simmer covered for 5-8 minutes over low heat. Turn off the heat and let it simmer for 10 minutes. Sauté the onion in oil. Add the carrots and curry powder, sauté, and cook for 3 minutes over medium heat. Add the spinach and a little vegetable stock, cover, and sauté until al dente. Stir in the millet and season with salt, pepper, and nutmeg. Stir in the soy cream.
