Ingredients for 2 servings:

  • 1 large zucchini
  • 1 large eggplant(s)
  • 3 tomatoes
  • e.g. salt and pepper
  • Oil, for frying
  • e.g. paprika powder
  • 1 small onion(s)
  • 1 garlic clove(s)
  • ½ cup cream cheese
  • 3 slices of cooked ham

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Finely dice the onion and garlic. Then peel the zucchini with a vegetable peeler to create nice, long zucchini strips. Slice the eggplant into thin rings. Dice the tomatoes and ham. Heat a pan with oil and fry the onions, garlic, zucchini, and eggplant. When everything is nicely browned, add the tomatoes and simmer until reduced. If you prefer a thinner dish, add a little more water. Then add the ham and season to taste. To top it all off, simmer half a cup of cream cheese.
