Vegetable Parmesan Fries

Ingredients for 2 servings:

  • 1 zucchini
  • 1 kohlrabi
  • 3 carrots
  • e.g. breadcrumbs
  • e.g. Parmesan
  • 2 eggs
  • 1 curry powder
  • 1 paprika powder
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Breaded vegetable sticks, low carb, vegetarian

Preheat the oven to 200°C (400°F). Peel the vegetables and cut them into equal-sized strips, roughly like French fries. Arrange them on a baking sheet, sprinkle them lightly with salt, and place them in the oven for about 25 minutes. Since the vegetables release some water, they need to dry out in the oven before coating. Then, coat the warm vegetables first in beaten egg and then in the Parmesan and breadcrumb mixture. Then, distribute the vegetable strips back on the baking sheet, sprinkle with the seasoning, and drizzle with a little olive oil. Bake at about 175°C (350°F) for about 25 minutes. The crust should be golden brown. I recommend serving it with roasted chicken and a healthy yogurt dip!
