Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 16 minutes; Total time approx. 2 hours 36 minutes
for pulled pork
Mix the lukewarm water with the milk and sugar, ideally in a food processor. Crumble in the yeast cube. Fresh yeast is important here; the rolls won’t rise as well with dried yeast. Let the mixture rise for about 10 minutes. Then add the flour, salt, an egg, and the melted butter and knead everything on high speed for about 5 minutes until you have a smooth dough. Cover the dough with a tea towel and let it rise for about 1 hour in a warm place. Then divide the dough into 10 pieces, each weighing about 90g. Shape the dough portions into balls and place them on a baking sheet lined with baking paper. The dough is very sticky, so it’s best to lightly flour your work surface and your hands. Now cover again and let the dough pieces rise for another hour. In the meantime, mix the second egg with 2 tablespoons of milk and 2 tablespoons of water. Then carefully brush the rolls with the egg-milk mixture and sprinkle with some sesame seeds. Bake the rolls for 16-20 minutes in a preheated oven (200°C) (top/bottom heat) and then let them cool slightly. These rolls are perfect with hamburgers or pulled pork, but also for breakfast with Nutella.
