Vegetable quiche

Ingredients for 1 servings:

  • 1 package of puff pastry, round, rolled out
  • 4 tbsp Parmesan, grated
  • 4 tbsp breadcrumbs, unseasoned
  • 7 slices of Black Forest ham
  • 500 g frozen vegetable mix (variety nB; mine contained carrots, beans, broccoli, and cauliflower)
  • 3 eggs
  • 100 ml milk
  • 180 ml cream
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

for a round tray of 28 cm

Preheat the oven to 220°C (top/bottom heat) and place the oven rack in the center. Line a 28 cm round baking sheet with the batter, sprinkle with breadcrumbs and Parmesan cheese, prick with a fork, and refrigerate. For the topping, whisk together the eggs, milk, and cream well and season to taste (be careful if the vegetable mixture has already been seasoned). Remove the baking sheet from the refrigerator and place the ham slices on top of the Parmesan cheese. Spread the frozen vegetable mixture on top and pour the topping over it. Baking time: 30-40 minutes; the topping should be firm and lightly browned. Variation: Without the Black Forest ham, this makes a delicious vegetarian dish.
