Vegetable sauce "Tomato-Zucchini" in stock

Ingredients for 1 servings:

  • 2 large zucchini
  • 5 tomatoes
  • 5 carrots
  • 4 green bell peppers
  • 2 large onions, red
  • 5 cloves garlic
  • 2 pts. tomatoes, pureed, 500 g each
  • 1 tube(s) Tomato paste
  • 1 can of chopped tomatoes (400 g each) or fresh tomatoes
  • 1 tsp cayenne pepper
  • 2 tsp sweet paprika powder
  • 10 tsp sugar
  • 3 tsp salt
  • 1 tsp curry
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 handful of mocha beans (chocolate decoration)
  • 500 ml water
  • 1 lemon(s), the juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

For 7 jars (750 ml each): Fry the roughly chopped onions and garlic in the oil. In the meantime, core the zucchini and dice them. Do the same with the tomatoes, carrots and peppers. Add everything to the pot and fry. Then add the passata, chopped tomatoes, tomato paste and lemon juice, and pour in 1/2 liter of water. Simmer everything for about 1 hour, stirring occasionally. Allow to cool briefly and then puree thoroughly. Now add all the spices and the chocolate and bring back to the boil briefly. Pour into hot, rinsed jars and seal. I received 7 jars (750 ml each) and then cooked them in the oven for another 30 minutes. If you use the sauce, you can refine it with sausage, minced meat or fish to taste.
