Ingredients for 6 servings:
- 500 g potatoes
- 500 g carrot(s)
- 1 medium-sized onion(s), diced
- 1 stalk(s) leek
- 1 liter vegetable broth
- 250 ml white wine
- 2 tsp sweet paprika powder
- 1 tsp paprika powder, hot
- 2 pinches of cayenne pepper
- 1 tbsp olive oil
- 250 g king prawns
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
with king prawns
First, sauté the onion in the oil. Cut the potatoes into small pieces and peel and dice the carrots. Briefly sauté everything. Then deglaze with the broth and white wine and simmer for 25 minutes. Towards the end, add the king prawns and reduce the heat so the soup is no longer boiling. Let the prawns sit in the soup for 10 minutes. Serve with a dollop of crème fraîche.
