Ingredients for 4 servings:
- 300 g minced meat
- salt and pepper
- 2 tbsp olive oil
- 2 onions
- ½ cauliflower, cut into florets
- 200 g leek, in rings
- 200 g carrot(s), in sticks
- 2 stalk(s) celery, sliced
- 1 pinch of cayenne pepper
- 2 tbsp thyme
- 1 can of tomatoes, chopped
- 2 liters of meat broth
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Cauliflower, leek, carrot, celery
Season the minced meat with salt and pepper and roll into small balls. Heat the oil in a soup pot and sauté the onion until translucent. Add the cauliflower, leek, carrot, and celery with cayenne pepper and sauté for about 3 minutes, stirring. Add the thyme, tomatoes, and meat broth, and simmer over low heat for about 20 minutes. Add the minced meat balls and let stand for about 10 minutes.
