Vegetable Soup with Semolina Dumplings

The perfect vegetable soup with semolina dumplings recipe with a picture and simple step-by-step instructions.

Semolina dumplings:

  • 250 ml Milk
  • 1 tbsp Butter
  • 1 tsp Seasoned salt from my KB
  • 1 tsp Freshly grated nutmeg
  • 100 g Durum wheat semolina
  • Freshly chopped chives
  • 2 Eggs

Soup:

  • 1 Onion
  • 2 Garlic cloves
  • 2 Tomatoes
  • 2 tbsp Tomato paste
  • 1 kg Vegetables to taste
  • 1 kg Carrots
  • Celery root
  • Kohlrabi
  • Beans
  • Fennel
  • Broccoli
  • Cauliflower
  • Frozen peas
  • 250 g Waxy potatoes
  • 1,2 liter Water
  • 1 tsp Seasoned salt from my KB
  • 1 tsp Garlic pepper from my KB
  • 3 Bay leaf fresh
  • 4 Juniper berries
  • 1 Pc. Mace
  • 1 Pc. Dried chilli pepper
  • Self-Smoked in my smoker
  • Dried oregano
  • Dried marjoram
  • Telly cherry pepper

Semolina dumplings:

  1. Bring the milk with butter and seasoned salt to the boil, remove from the stove and stir in semolina! Let sources! Let cool down a bit and stir in 2 eggs and chives with nutmeg! Let it cool completely! Then form small dumplings.

Soup:

  1. Finely dice the onion and garlic. Wash the tomato, remove the stalk and roughly dice. Wash and clean the vegetables, peel and dice depending on the variety. Halve the beans. Peel and dice the potatoes.
  2. Heat the oil in a large saucepan and roast the onions and garlic in it, then add the tomato paste and fry briefly. Then add tomatoes and fry for 5 minutes. Then deglaze with a little water and simmer a little. Now add the remaining water with garlic pepper and seasoned salt. Add the vegetables except for the broccoli and peas. Cook on low heat for about 15 minutes! Rub in the chilli!

Semolina dumplings:

  1. Heat salt water and cook the semolina dumplings for about 5 minutes. When you swim up you are done. Put aside.

Soup:

  1. After 15 minutes add broccoli and peas to the soup and cook for another 10-15 minutes!
  2. Season with seasoning salt, garlic pepper, nutmeg and pepper! Add oregano and marjoram! Finally add the dumplings and warm up! Serve!
