Vegetable spread

Spread the love

Ingredients for 1 servings:

  • 1 bell pepper(s), yellow
  • 1 tomato(s)
  • 1 onion(s)
  • 3 tbsp tomato paste
  • 1 handful of sunflower seeds
  • 1 tsp honey
  • 1 tbsp oil (walnut oil or other vegetable oil without an extreme flavor)
  • 1 pinch(s) cumin
  • salt and pepper
  • possibly potato flour or wheat flour

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Vegetarian

Roast the onions and sunflower seeds in a pan with a little oil and the honey until lightly caramelized. Chop the bell pepper and tomato and mix them with the roasted onions and sunflower seeds, the tomato paste, and the walnut oil using a food processor (or similar) until a spreadable mixture forms. Then refrigerate for at least 45 minutes to make it more spreadable. If it’s too runny (depending on the water content of the tomato or bell pepper), you can add more tomato paste or a little wheat or potato flour until you achieve a creamy mixture.
