Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 1 stalk(s) leek
  • 5 tbsp vegetable broth
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

The above quantities of ingredients are sufficient if you’re serving the vegetable tagliatelle as a side dish! Using a vegetable peeler, slice the zucchini into strips lengthwise, slice the leek lengthwise, and cook both in hot vegetable broth until al dente (just taste it, just like you would with real pasta; the vegetables shouldn’t be overcooked). Drain the water, season with pepper, and you have a great alternative to pasta. As a main course, pasta sauce or pesto goes very well with it.
