Ingredients for 2 servings:

  • 250 g cauliflower
  • 100 g broccoli
  • 1 stalk(s) leek
  • 1 carrot(s)
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 tbsp clarified butter
  • 1 banana(s)
  • 1 tsp curry powder, hot
  • 100 ml vegetable stock
  • 100 g whipped cream
  • Cayenne pepper
  • 2 tbsp yogurt, 3.5% fat
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Divide the cauliflower and broccoli into small florets. Slice the leek and carrot. Finely dice the onion and garlic. Heat the clarified butter and sauté the onion. Dice the banana and add it. Add the garlic and sprinkle with curry powder. Add the cauliflower, broccoli, leek, and carrot and fry. Pour in the stock and cream and simmer over low heat for about 20 minutes. Season with curry powder, salt, and cayenne pepper. Stir in the yogurt. Serve with rice.
