Vegetarian hunter's sauce

Ingredients for 4 servings:

  • 500 g fresh, dark mushrooms, sliced
  • 4 small onions, finely diced
  • 1 bell pepper(s), red, diced
  • 2 peppers, red, deseeded
  • 400 ml vegetable stock
  • 1 small can of tomato paste
  • 100 ml cream
  • Rapeseed oil
  • pepper
  • Herbs of Provence

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Sauté the onions in a little oil, add the diced bell peppers and chili peppers. Now add the mushrooms and simmer briefly. Pour in the vegetable stock, add tomato paste, and cream. Reduce the sauce until it reaches the right consistency. Season with pepper and Provençal herbs. Served with rösti, it makes a complete vegetarian dish. This sauce also goes well with schnitzel.
