Ingredients for 3 servings:

  • 1 bell pepper(s)
  • 2 zucchinis
  • 1 eggplant(s)
  • 2 cans of tomatoes
  • 1 cube of Kräuterling(e) (Italian) – alternatively as a seasoning
  • 1 onion(s)
  • 1 clove(s) garlic
  • 3 tbsp olive oil
  • Pasta (Penne)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mince the garlic clove and dice the onion. Sauté both in olive oil. Chop the zucchini, bell pepper, and eggplant and add them. Sauté briefly. Add the canned tomatoes. Cover and simmer for about 20-30 minutes. Season with herbs (or vegetable stock, if desired), salt, and pepper. Boil the penne and serve with the sauce.
