Vegetarian spinach pizza

Ingredients for 4 servings:

  • 500 g flour (wheat, rye or spelt flour)
  • 275 ml water, lukewarm
  • 1 tsp salt
  • 1 point yeast
  • 350 g leaf spinach, fresh or frozen
  • salt and pepper
  • 2 garlic cloves
  • 30 ml tomato paste
  • 50 ml water
  • 1 tsp oregano
  • 200 g sheep’s cheese
  • 200 g cheese, grated

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the dough ingredients with a hand mixer until smooth. Cover the dough with a cloth and let it rise in a warm place for about 30-45 minutes. In the meantime, briefly warm the spinach with a little water in a saucepan, drain off the excess water, and season the spinach with a little pepper and salt. Crush the garlic cloves with a garlic press. Crumble the feta cheese with your fingers. Mix the tomato paste with water and oregano. Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper and roll out the dough. You can also use several small round baking sheets. If you have any leftover dough after rolling out the dough, you can make great pizza rolls. Spread the tomato paste over the rolled out dough. This works best with a tablespoon. Now spread the spinach over the pizza, followed by the garlic and cheese. Place the pizza in the oven and bake at 200 degrees Celsius for about 10-15 minutes.
