Vegetarian stuffed peppers

Ingredients for 4 servings:

  • 4 large bell peppers
  • 1 m.-sized onion(s)
  • 1 large zucchini
  • 2 beefsteak tomatoes, firm
  • 400 g cheese (Gouda)
  • 1 point feta cheese
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 180°C. Wash the peppers, carefully cut off the tops, and remove the seeds and stems. Dice the beefsteak tomato, zucchini, onion, Gouda, and feta, mix, and season to taste. Stuff the peppers. Place in an ovenproof dish (I make aluminum foil rings around the peppers to prevent them from falling over). Place the peppers inside and put the lids on. Bake in the oven for 30 minutes, until the cheese melts nicely. If desired, add a few pieces of cheese on top; it’s baked right away.
