Ingredients for 6 servings:

  • 200g Camembert(s)
  • 200 g cheese (Limburger)
  • 200 g cheese (Romadur)
  • 200 g butter
  • 1 onion(s)
  • Salt
  • pepper
  • Paprika powder
  • 5 tbsp beer, dark
  • some parsley or chives

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Dice the onion into small cubes. Melt the butter in a small saucepan, add the onions, and remove from the heat. Let cool. Remove the rind from the cheese pieces, break them up into smaller pieces by hand, and place them in a food processor with the onion butter and dough hook. Knead on low speed until the largest pieces are no larger than 5 x 5 mm. Add the beer and season with salt, pepper, and paprika. Let stand for at least an hour, preferably overnight. Garnish with parsley or chives and serve on crusty, dark bread.
