Ingredients for 1 servings:

  • 2 eggs, hard-boiled
  • 1 bell pepper(s)
  • 1 gherkin(s)
  • ½ onion(s)
  • 1 tsp mustard
  • 150 g low-fat curd cheese
  • Parsley
  • salt and pepper
  • Paprika powder
  • possibly sour cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Press the cold eggs through a spaetzle press. Finely dice all other ingredients and mix with the quark, eggs, and mustard. Season with parsley and spices. Add a tablespoon of sour cream, if desired.
