Vinaigrette for lettuce

Ingredients for 4 servings:

  • 50 ml apple cider vinegar
  • 50 ml Balsamic vinegar, white
  • 50 ml olive oil
  • 50 ml pumpkin seed oil
  • some salt
  • some pepper, from the mill
  • 2 cloves garlic, peeled and very finely chopped
  • 3 small shallots, peeled and finely chopped
  • 1 tbsp parsley, finely chopped
  • 1 tbsp chives, finely chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine the two vinegars in a bowl. Add salt and stir until dissolved. Stir in the shallots, garlic, and herbs. Let stand for about 30 minutes. Stir in the two oils and season with pepper. Mix the sauce thoroughly with a spoon and pour spoonfuls over the salads.
