Vogtland potato pancakes

Ingredients for 4 servings:

  • 1,500 g potatoes
  • 1 liter buttermilk
  • 2 onions
  • 1 tbsp flour
  • salt and pepper
  • Fat
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Grate the peeled, raw potatoes, drain or squeeze out some of the excess water. Add buttermilk, finely grated onions, flour, salt, pepper, and a pinch of sugar, and mix everything together. Form the mixture into small patties and fry until golden brown on both sides. Serve with applesauce, pear compote, or blueberries.
