Waikiki Meatballs

Ingredients for 4 servings:

  • 700 g minced beef
  • 60 g breadcrumbs
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 1 egg(s)
  • 60 ml milk
  • 1 ½ tsp ginger, grated
  • 2 tbsp parsley, chopped
  • ½ tsp cumin powder
  • 1 tsp salt
  • ½ tsp sweet paprika powder
  • 2 tbsp oil, neutral
  • 1 m.-sized onion(s)
  • 1 m.-sized carrot(s)
  • 1 bell pepper(s), green
  • 60 ml water
  • 2 tsp, heaped cornstarch
  • 100 g brown sugar
  • 60 ml balsamic vinegar, white
  • 150 ml pineapple juice (from the can)
  • 150 g pineapple pieces (from the can)
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • n. B. Pepper, black
  • e.g. chili
  • possibly salt

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes

A dish from Hawaii – meatballs in a sweet and sour sauce

Peel and finely dice the onions, peel and dice the carrot. Peel and crush the garlic clove. Deseed and dice the bell pepper. Drain the pineapple pieces and reserve the juice. Wash the parsley, remove the stems, and chop. Remove the outer layer of fresh ginger and finely grate. In a large bowl, mix the ground beef with breadcrumbs, half of the diced onions, garlic, egg, milk, parsley, ginger, cumin, paprika, and salt. Let the meat mixture rest in the refrigerator for half an hour. Then, using a spoon, form meatballs. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the meatballs to the skillet and cook until evenly browned and cooked through, draining any excess fat. Heat the oil in a small saucepan and sauté the second portion of the diced onions and carrots. Add the water, cover, and simmer over low heat for 5 minutes. Add the meatballs to the pan along with the diced bell peppers. In a small bowl, combine the cornstarch, brown sugar, pineapple juice, vinegar, ketchup, and soy sauce; stir until smooth. There should be no lumps. Season with pepper and chili. Then pour into the pan with the meatballs and vegetables. Bring to a boil, stirring constantly, and simmer until the sauce thickens slightly. Continue simmering for about 5 minutes. Stir in the pineapple pieces, return to a boil briefly until warm, and season with salt, if desired. Serve with rice.
