Ingredients for 4 servings:
- 1 kg fish fillet(s) (Waldviertler carp fillet)
- Salt
- pepper
- ½ lemon(s), the juice
- 3 tbsp butter
- 1 red bell pepper(s)
- 3 tomatoes
- 2 large onions
- 125 ml red wine
- marjoram
- Cayenne pepper
- corn flour

Original Waldviertel recipe
Clean and portion the carp fillets, season with salt on both sides and drizzle with lemon juice. Heat butter in a pan and fry the fillets on both sides; then keep warm. Peel the onions and slice them into large rings, deseed the peppers and cut them into strips. Sauté both in the pan juices, season with salt and marjoram, pour in the red wine and cook for about 2 minutes. Roughly dice the tomatoes and add them to the vegetables, then sauté them briefly, as otherwise the vegetables would become too mushy. Season with cayenne pepper and thicken with a little cornstarch if necessary. Carp farming in the Waldviertel has a very long tradition; the small ponds with the relatively low temperature make the Waldviertel carp unmistakable. The Waldviertel is located in the northwest of Lower Austria on the border with the Czech Republic. The recipe was passed on by Mr. Josef Dammerer (Lower Austria).
